This is a beautiful decaff from a farmer co-op in the Marcala / La Paz region of Honduras. Decaff, for a long time has gotten a bad rap from coffee enthusiasts. Coffee roasters would often send lower grade coffee to the decaffeination plants due to the low demand. But as specialty coffee culture has skyrocketed in the last two decades, so has the demand for good quality decaff. However, while the quality of decaff coffee has greatly increased, most still have a flavor/feel from the processing that is recognizable to the enthusiast community and frowned upon. Decaff tastes like decaff. But this bean doesn’t have that.

It’s the first decaff I’ve had that doesn’t taste like decaff. It just tastes like coffee.
